Crustless Pumpkin Pie Recipe

I know. I know. Crustless pumpkin pie? Really? Yes, that’s what I mean. My daughter has always preferred the pumpkin pie filling and it turns out, so does my future stepson. His birthday party was several weeks ago and he asked me to make him a crustless pumpkin pie for his birthday. I know it’s not a birthday cake, but that’s what he wanted, so I made two of them today. (I doubled the recipe.)

Chicken Enchiladas Recipe

With a family of six, there is ALWAYS something that needs to be done in our home, like vacuuming, sweeping, dishes, laundry, etc. And as my boyfriend is quick to point out, a woman’s work is never done. How right he is. I get out of bed at 6:15 in the morning and don’t fall asleep until after 10pm at night. From the moment I get out of bed, it’s go go go. Because I’m extremely busy, and the schedules for everyone are all over the place, it helps to cook meals that I can throw together quickly and that taste good.

One of my favorite meals to make for my now family of six is chicken enchiladas. I have tried several different versions since I first began making them but the one I keep coming back to is the one below. It’s my daughter’s favorite. Whenever I make it she always has two helpings.

Parenting: What is a Stepparent’s Roll?

When you find yourself in a new relationship once divorced, and your significant other has children, what is your roll in that relationship? What are your responsibilities?

When I got divorced I knew that more than likely I would end up with someone who had children from a previous relationship. In fact, most dates I went on were with guys who had children. I felt they understood my situation as a single mom better — that my kids come first, no matter what. Whoever I was with needed to understand how important my children are to me. Everything I’ve done in life is to try and give them a better one. I have sacrificed a great deal to make sure my kids have what they need.

Last night my son was full of piss and vinegar. Chris and I were laying on the bed, talking, when my son and daughter walked in and Blake did what he does best. If you’re a Cake Boss fan, you’ll love this short video of my son. He and my daughter are fans of the show, so to hear him come out with this made Chris and I laugh our butts off.

We Are a Lego Family

If you ever walked in my boyfriend’s basement, one of the things you’d notice is that his son has a HUGE collection of Legos. I thought my son had a lot but it’s nothing in comparison. And believe me, his son makes use of his collection. I’m in awe of the things he creates at nine years old. He has quite the imagination and I wouldn’t be surprised if he ends up becoming an architect one day.

As for my son, he’s still young so his designs aren’t as intricate as my the nine-year-old but he still uses his imagination to create things. And since I have a creative mind of my own that I use to create worlds on paper/screen, I appreciate both boys’ creativity.
