One of my favorite Mexican dishes to eat is chicken chimichangas. I have had them several places, including Margaritas, and I’ve wanted to make them on my own ever since. Last night, I finally did. I tweaked the recipe I found on Pinterest a little bit to fit my family’s likes. We definitely like our dishes a bit spicier.
If you love rotisserie chicken, you’ll love chimichangas made with it. The ones I made last night were delicious. In fact, my boyfriend said they are just as good as any he’s at a restaurant. And he said the best part was, we were able to eat them in the comfort of our own home. I will definitely be making these again in the not so distant future.

Rotisserie Chicken Chimichangas
Ingredients:
- 1 rotisserie chicken
- 1 can of chopped green chile
- 2 tbsp. of Hot Mexican Style Chili Powder
- 1 clove of minced garlic
- 1/2 cup of finely chopped onion
- 1 pkg. of small flour tortillas
- Canola oil
- 1 1/2 cups of shredded Monterey Jack Cheese
- 3 tbsp. Margarine
- 2 tbsp. of flour
- 1 1/2 cups of milk
- 1/2 cup of water
- Toothpicks
- Salt to taste
- Pepper to taste
