Do you have a favorite go to appetizer when you have family over? For me, it has to be Scallop Stuffed Mushrooms. I have been making these for years, since I was a teenager, in fact. They are sinfully delicious, and you can’t eat just one. Seriously! I dare you to try.
I remember the first time I ate them at a party at my aunt’s apartment. After one bite I was hooked. And now, years later, my boyfriend is. I made them for the first time for him and his family last weekend. He and my daughter had me make them again for New Year’s Eve. And I’m sure I will be asked to make them again for the Superbowl.
If you’d like to try your hand at making your own scallop stuffed mushrooms, I’ve included the instructions below. They are very easy to follow, and it doesn’t take much time to prepare.
Ingredients:
Mozzarella cheese, shredded
Fresh mushrooms (Portabello are a great option too! I’ve used the large portabello caps and they were DELICIOUS!)
Scallops, diced (I prefer Sea but Bay work fine too. Also, you can use frozen or fresh, just make sure to defrost the frozen ones first.)
Butter
Italian Breadcrumbs
Water
1- Remove stems from mushrooms. You don’t need to use a knife. They pop right out of the cap.
2- Cut stems into small pieces.
3- Saute mushroom pieces in butter until they begin to brown. Once done, remove from heat and place in a medium-size bowl.
4- Place caps into a brownie pan. Or lasagna pan if you’re making a bigger batch.
5- Place diced up scallops in your frying pan with butter until they begin to brown just slightly and turn white.
6- Put cooked scallops into the bowl with mushrooms. Add about a cup of breadcrumbs. You can continue to add breadcrumbs based on personal preference. I prefer my stuffed mushrooms to have more scallop in each bite opposed to more breadcrumbs.
7- Use a teaspoon and scoop the mixture into each cap. Once your mushrooms are full, sprinkle mozzarella cheese on the top. Again, you can add as much as you like. I prefer a lot of cheese on mine.
8 – Cook at 375° until cheese melts and begins to brown.
