With a family of six, there is ALWAYS something that needs to be done in our home, like vacuuming, sweeping, dishes, laundry, etc. And as my boyfriend is quick to point out, a woman’s work is never done. How right he is. I get out of bed at 6:15 in the morning and don’t fall asleep until after 10pm at night. From the moment I get out of bed, it’s go go go. Because I’m extremely busy, and the schedules for everyone are all over the place, it helps to cook meals that I can throw together quickly and that taste good.
One of my favorite meals to make for my now family of six is chicken enchiladas. I have tried several different versions since I first began making them but the one I keep coming back to is the one below. It’s my daughter’s favorite. Whenever I make it she always has two helpings.
Ingredients:
1 bag of Tyson Grilled and Ready Oven Roasted Cubed Chicken
2 8oz. pkgs of cream cheese
2 cans of green chile enchilada sauce
1 bag of crunchy onion rings
1 sm. can of chopped green chiles
1 lg. bag of colby jack cheese
1 8 count bag of tortil itllas (I prefer wheat.)
Directions:
1- Heat chicken chunks in a frying pan. (You can use canned chicken if you prefer. I have and I love it.)
2- While chicken is cooking, cut the cream cheese into chunks. Once chicken is heated through, put the cream cheese in the pan and the entire can of green chiles. Stir contents of pan until the cream cheese melts and everything is blended together.
3- Spray a casserole dish with nonstick cooking spray or line with aluminum foil.
4- Spoon mixture into middle of tortilla and roll the tortilla up. Place in pan.
6- Once pan is full, top with green chile enchilada sauce, then the colby jack cheese. Top with crunchy onion rings.
7- Bake at 375 until cheese is melted.
